Black Angus Beef Shank Meat Boneless beef shank meat comes from the lower leg of the cow and is a flavorful cut often used in soups, stews, and slow-cooked dishes. It is a tough, muscular cut that benefits from long, slow cooking to break down its connective tissues and tenderize the meat. The meat from the beef shank is rich in flavor, with a deep, beefy, savory taste. It's also known for its gelatinous texture, which comes from the collagen in the connective tissues, becoming tender and juicy with a satisfying chewiness when cooked properly. Approximately 1 LB All of our beef is unaged and domestically raised by local American farmers and Angus-bred.
