Hakutsuru Draft Sake 720ML is an unpasteurized (nama) Japanese sake from Kobe's Nada district, bottled at 14.5% ABV in a 720ml format. Quick Facts: ABV: 14.5% | Origin: Nada, Kobe, Hyogo Prefecture, Japan | Style: Nama (Unpasteurized) Draft Sake | Brewery: Hakutsuru Sake Brewing Co., Ltd. Production & Heritage Hakutsuru Sake Brewing Co., Ltd. was founded in 1743 in the Nada district of Kobe, one of Japan's most revered sake-producing regions, prized for its mineral-rich Miyamizu water and ideal brewing climate. Unlike conventional sake, which undergoes double pasteurization (hi-ire) for shelf stability, Draft Sake skips this step entirely, preserving the vibrant, raw character of freshly pressed sake. After brewing, the liquid is aged for approximately one month at around 41°F in its fresh state, allowing flavors to integrate without the dulling effect of heat treatment — a technique that demands careful cold-chain handling but rewards with exceptional brightness and texture. Tasting Notes Aroma: Sweet rice leads the nose with an almost creamy quality, followed by delicate notes of barely-ripe pear and roasted nuts. A subtle tropical undertone emerges as the sake opens in the glass. Taste: The entry is soft and inviting, with green melon and young coconut arriving across the mid-palate alongside light cream. As flavors develop, refreshing lime, delicate pineapple, and a surprising hint of cola add complexity. Despite these fruity impressions, the sake finishes distinctly dry in a classic Japanese style. Finish: Medium in length with a clean, smooth fade. A gentle sweetness from rice lingers momentarily before the dry, refreshing close takes over. How to Drink Draft Sake Serve well chilled, ideally between 40–45°F, to highlight the bright, unpasteurized character. A wine glass or slightly open-topped sake cup allows the aromatic nuances to develop fully. Sake Spritz: The melon and pear notes complement sparkling water and a citrus twist for a light, refreshing aperitif. Eastern Sidecar: Substitute sake for cognac alongside orange liqueur and lemon — the creamy body and dry finish hold up beautifully against citrus. Saketini: Mix with dry vermouth and a cucumber garnish; the clean, fruity profile makes a crisp, elegant variation on a classic Martini. Best For Introducing a curious wine or beer drinker to premium sake Pairing with a sushi or izakaya-style dinner at home Warm-weather entertaining when guests want something chilled and refreshing Gifting to someone exploring Japanese food and drink culture Frequently Asked Questions What does Hakutsuru Draft taste like? It delivers green melon, young coconut, and light cream on the palate with a fruity yet decisively dry finish, backed by a sweet-rice and pear-scented nose. How does Hakutsuru Draft compare to Gekkeikan Cap Ace Sake? Both breweries are historic Nada-district producers with wide global distribution, but Hakutsuru Draft is unpasteurized (nama), giving it a noticeably fresher, more vibrant character than Gekkeikan's pasteurized Cap Ace. The cold-aged Draft Sake tends to show greater aromatic complexity and a lighter body. Is Hakutsuru Draft good for sake beginners? Yes — its smooth, fruity profile and clean dry finish make it approachable without sacrificing authenticity, and its 14.5% ABV sits in the standard range for sake. Where is Hakutsuru Draft made? It is brewed by Hakutsuru Sake Brewing Co., Ltd. in the Nada district of Kobe, Hyogo Prefecture, Japan — a region considered one of the country's top sake-producing areas since the Edo period. What foods pair well with Hakutsuru Draft? Fresh sashimi and sushi benefit from its clean acidity; tempura's crisp batter contrasts nicely with the creamy texture; grilled yakitori complements the dry finish; light salads with citrus vinaigrette mirror the melon and pear notes; and soft, mild cheeses like fresh mozzarella echo the sake's delicate creaminess. What sizes does Hakutsuru Draft come in? The standard format is 720ml, which is the traditional Japanese "yongobin" bottle size widely used for premium sake. Is Hakutsuru Draft worth the price? It positions as an accessible, entry-to-mid-level premium sake that punches above its price tier — the 93-point Tastings.com score and unpasteurized production method represent strong value against pasteurized competitors at similar price points. Why Hakutsuru Draft? The defining advantage here is the unpasteurized, cold-aged process: a month at 41°F in its raw state produces a freshness and vibrancy that standard double-pasteurized sake cannot match. Backed by nearly three centuries of brewing expertise from one of Nada's most established houses, this is not an experimental novelty — it is a refined expression of a traditional approach executed with modern precision. The 93-point score from Tastings.com confirms what the palate suggests: this Draft Sake delivers complexity, balance, and genuine character. For anyone seeking a step beyond the pasteurized mainstream without venturing into ultra-premium pricing, Hakutsuru Draft occupies an unusually compelling position in the category.
