Vault City's Year 3 Tropical Sour revisits a recipe from 2020, back when the Edinburgh brewery was still cuckoo brewing in Dundee. Now part of its eighth birthday celebrations, thi s 7% sour brings together mandarin, mango and passionfruit, fermented with Vault City's house mixed culture. Juicy mango leads the way, backed by bright mandarin citrus and the sharper tropical tang of passionfruit. The mixed fermentation adds a lively tartness to balance the fruit, keeping things fresh rather than overly sweet. Intensely fruity, properly sour and packed with tropical character, this is a welcome return to Vault City's archives. Show more
